Tony Hawk & The Bird Bagel

The following is an excerpt from Robert Earl's new book X-treme Cuisine released by HarperCollins. Tony Hawk not enough for ya? Well there's tons of other pros cooking tons of their favorite meals, so check out a copy when it hits the stores on October 1st.

Ingredients:

1 egg

1 shredded Jack & Cheddar cheese mix

1 bagel (preferably plain)

Tony Hawk skillfully completes a crucial step in the making of a Bird Bagel.

What to Do:

1) Find a microwave-safe bowl approximately the same diameter as a bagel. "We have perfect size Tupperware bowls in our house, but I have no idea where they came from."

2) Crack the egg over the bowl and pour it in. If you manage to not spill any egg outside the bowl or get any bits of shell in it, then you are a Bird Bagel Prodigy. Scramble it.

3) Sprinkle cheese over the egg, covering the top completely with a thin layer.

4) Split the bagel and stick it in the toaster.

5) Heat the egg in the microwave on high for a minute and a half.

6) Wait patiently - have some coffee or juice. Now is a good time to throw the egg shell away, put the cheese back and clean the fork you used to scramble the raw egg. Never risk salmonella for haste.

7) Use the freshly cleaned fork to remove the egg and cheese creation from the bowl and place it on the bagel. Work on the timing of toasting versus egg cooking so that both come out hot (cold eggs are nasty).

8) Cut the Bird Bagel in half and consume. Eat it in your car if you are in a hurry. Don't forget to to pick up a vanilla cafe au lait or vanilla iced blended if there is a Coffee Bean and Tea Leaf on your way.
